Mazer Cup Bronze Medal Winner
An off-dry sparkling melomel made with pure basswood honey from Upstate
New York and handpicked Alaskan red currants. This lovely pink mead
represents 'Spring' in our 'Four Seasons of Sparkling Mead' series. The
unique flavor of the basswood honey is beautifully enhanced by the
tart, fruity red currants from Talkeetna. This one is only available on
tap, so bring your growlers.

Mazer Cup Bronze Medal Winner
A sweet methyglyn made with pure honey, whole coriander and bitter
orange peel. The spices combine beautifully with the honey aroma. The
honey flavor starts immediately and is followed boldly by the spices.
The sweetness is counter-balanced by the spices. Lively, bright and
warming from the alcohol. Goes well with Mexican cuisine or other spicy
foods.

A semi-sweet traditional mead made with pure raw
sourwood honey from the Blue Ridge Mountains of North
Carolina. This lucsious honey has a distinct fenugreek
character that is supported by leather, tobacco and wood characters. A
touch of French oak enhances the natural woody character of the honey.
One year of aging before release provides a mature character to this
spectacular honey.

The sorghum honey has a distinctly caramel, malt, molasses flavor. The

with 50% mead, 47%
Petite Syrah wine and 3% Grenache wine. All three were fermented
seperately using different yeasts and aged seperately before blending.
Each yeast provides specific characters that harmoniously blend to
produce a great pyment. Fruity and complex with significant french
oak character. The tannins and acids from the grapes perfectly balance
with the sweetnes of the honey. |

Cyser

- This full bodied sack cyser was made with apples and
crabapples grown in Alaska, a hint of dates and raisins, and
aged in bourbon casks for 6 months. At 16% abv it is brimming with
apple and honey flavor. Although technically a sweet cyser the
sweetness is offset by the tartness of the apples and the bourbon and
oak add layers of complexity. |

SPECIAL RESERVE
- A traditional mead blended
with tawny port from a solera system. The port is from the central
valley in California and is made with Tinta Madera grapes from
2000-2006 vintages. The mead was made with raw, dark, clover sorghum
honey from Missouri using a Cotes du Rhone yeast. The port flavors
(raisins, plums,oak) are further enhanced by the molasses and caramel
flavors of the mead. Truly a special blend. |

The
Fall
9.5%ABV - $21.00 per 375ml
A semi-sweet cyser with a touch of tart cherries. At 9.5%ABV
this is a little stronger than a cider but definitely a little milder
than most meads although it is definately not mild flavored. The
tartness of the apples (and cherries) is obvious, but not overpowering.
The honey softens the apples and cherries which add complexity to the
honey. A great mead for the summer. Try it over ice on hot days. |

Pollinator I

A traditional sack mead at 17% abv aged for 6 months in port
barrels. Made primarily with NC Spring Wildflower honey and fermented
with champagne yeast. This is the first in a series of strong (sack)
traditional meads aged in oak barrels. Each one will be produced with a
different honey or combination of honeys and aged in various oak
barrels. |
